You're very right, while Japanese customer service is by all means excellent, it's also very rigid-- something I love about the U.S. is its flexibility and creative thinking to serve others, and hope to see more in Japan!

and while I wouldn't say that Japanese restaurants are necessarily trying to change the eating habits of their customers, it just so happens when the culture revolves around seasonal and fresh ingredients, we adopt these values for ourselves 😊 Environment is such a big factor in our health!
