Thank you for sharing this! I agree, most sweets in Japan use less sugar than that in the United States, and focus on trying to bring out natural flavors in their food. Desserts (notably wagashi, or traditional Japanese confectionery) tend to be very seasonal.

I am particularly fond of Japanese cakes over American ones, and even while I was living in the United States I would go to a Japanese bakery for my birthday cake 😊
