I’m not dismissing a vegan or vegetarian diet as unhealthy, but I hope to help others realize it’s not the optimal diet for all of us (health-wise, lifestyle, or just personal preference). We each have our own biological differences, and we also lead very different lives from Japanese monks, so it’s natural for us to require a different nutritional need from our diet as well 😊
And valid point about other cuisines using thinly sliced meats, but I had to choose a scope! Japanese food is where I first prominently noticed this difference, so chose to wrote about it in this cultural context, but yes I love enjoying different cuisines that share this kind of cooking as well!
