How to make meal prepping easier

It’s no secret that prepping for meals in advance makes cooking a lot easier.

Many seasoned cooks choose to prep on weekends rather than on weekdays, when they have less time to cook or are simply exhausted after the work day.

But ironically meal-prepping can be very time consuming, taking away precious leisure time from our weekends in preparation for the workweek. I’d rather not spend my free time like that.

Instead I prefer to eat well with less effort, which leads me to one of my favorite ‘secrets’ to healthy eating: Always chop more vegetables than you need, cook more than you need.

I never ever ever cook single-serving meals anymore

While I’m all for home-cooked meals and think it’s an essential part of a well-rounded lifestyle, many of us don’t have the bandwidth to take our time cooking and sharing meals with our loved ones every day.

But home cooking doesn’t necessarily mean it needs to be at the expense of quick and convenient meals.

Meal prep is a great way to have the best of both, but I’ve never understood the need to make meal prep its own occasion. Instead, we can just cook like usual — but in bigger portions.

If you always wash and chop more vegetables than you need, you always have some prepped produce in the fridge. You may not use all your mushrooms in tonight’s pasta, but you can toss it in tomorrow’s soup. You may not use all of your broccoli, but you can use it to top off tomorrow’s salmon rice bowl.

Likewise, if you cook more than you eat tonight, you have lunch for tomorrow or the day after. You can even freeze any leftovers, to enjoy it several weeks later.
