Fascinating! I haven’t really thought about the consequences of using ‘Westernization’ to describe the evolution of food, and further the development of the term ‘Asianization’ to describe a version of this reversal. All over the world Asian food is being more widely embraced and individuals are caring more about what they put in their bodies (as they should) — definitely plausible to see a societal change in which the burger chains which ruled in the past be replaced with healthier, balanced, variety-based meals. Perhaps the food delivery and meal kit services today are the beginning of that. If you have any further resources I could look at please send them over to me at kokumura@kakikata.space!
